I LOVE anything buffalo chicken! But, especially when eating out, “anything buffalo chicken” is usually not the healthiest choice. These are meal prep friendly and easy for any one on the go.
Have no fear, if you do not have an air fryer (sorry for your loss) you can make these in the oven.
Ingredients:
- 1 lb. 93% lean ground chicken
- 1/4 cup of almond flour or coconut.
- 1 egg
- 1/4 cup diced celery
- 2 scallions, chopped
- 1 clove garlic
- Sesoning to taste ( I used Trader Joes 21 Salute)
- Cooking spray
For the sauce:
- 1/3 cup hot sauce; my go-to is Frank’s.
- Tessamae Habanero Ranch
- Blue Cheese
- Spray air fryer basket with cooking spray and preheat air fryer to 400°F.
- Combine meatball ingredients in a large bowl and mix using your hands until thoroughly combined. Form meatballs into roughly 1.5″ balls. You should get about 15 meatballs.
- Cook meatballs in preheated air fryer for 12 minutes, turning halfway through. NOTE: You will need to cook the meatballs in two batches, making sure not to overcrowd the air fryer.
- When the second batch of meatballs is almost finished frying, toss with sauce and drizzle with Habanero Ranch.
- Garnish with toppings of your choice: blue cheese crumbles, scallions, etc., and serve!
