- 2 lbs. boneless skinless chicken tenders, sliced into small strips

- 1 T. canola oil

- ¼ cup soy sauce

- 2 T. apple cider vinegar (or rice wine vinegar)

- 2 T. ketchup

- 1 T. dark brown sugar

- 1 T. minced garlic
-
- ½ teaspoon grated ginger

- ½ teaspoon red pepper flakes
- 1 cup cashew halves
INSTRUCTIONS

- Heat oil on medium high heat in a large skillet. Add chicken and cook each side for 2 minutes until browned.

- Place chicken in the slow cooker and top with soy sauce, vinegar, ketchup, brown sugar, garlic, ginger, and red pepper flakes.

- Stir to combine.

- Cook for 2 hours on high or 4 hours on low.
